Five fat arms around a deep orange centre, these arrive whole and glossy and turn a platter into an occasion on their own. Cut one open and the inside is a cool pale green, firm enough to slice cleanly and mild enough to take garlic, chilli or citrus. Serve them chilled as a centrepiece, or warm them gently in butter for a few minutes.
